Our land, rich in traditions and flavours
Located in the heart of Spain, Alcarria is a region in Cuenca Province of authentic landscapes and arid climate, ideal for olive growing. Here, the sun-drenched hills give rise to a variety of olives of exceptional quality: The Verdeja, a variety endemic to this region, is the jewel of our land. Harvested at veraison in October and cold-pressed as soon as harvested, this olive produces an oil with intense aromas and deep flavors, reflecting all the richness of our Spanish terroir.
A Family Story
Pal’Olivo is much more than a company, it’s a family story of passion for the land and its fruit, and above all, of long hours spent at the table. Inspired by our grandparents, who passed on to us the love of respect for the land and attention to detail, we decided to carry on the legacy by producing high-quality organic extra virgin olive oil. Each member of the family plays an essential role in our project, combining know-how, innovation and dedication.
Angel Palomino de la Oliva
Producer and co-founder
Based in Buendia, Cuenca. It’s Angel who whispers in the olive tree’s ear all year round so that we can provide you with the best organic extra virgin olive oil. His sense of humor enliven the weekly meetings.
Jesus Perez Palomino
Director and co-founder
Based in Villeneuve, in the canton of Vaud, in Switzerland with Corine, Jesus, aka ‘El Abuelo’, accountant, import-export expert, responsible for stock and expenses, and many other tasks to make sure we can supply you with the very best olive oil every year.

Creative and co-founder
Based in Schaffhausen, in Switzerland, David is behind our brand image, packaging, bottles, labels and other creative tasks. @perezdavid
